Ingredients:
- 2 servings of white rice (refrigerate overnight for better)
- 100 grams of anchovies (anchovies or anchovies)
- 2 eggs, shake off
- 2 cloves of garlic, finely chopped
- 1 spring onion, thinly sliced
- 1 large red chili, sliced oblique (according to taste)
- 2 tablespoons of sweet soy sauce
- 1 tablespoon chili sauce (optional)
- 1 tablespoon sesame oil (optional)
- Right amount of oil
- Salt to taste
How to make:
- Heat some cooking oil in a wok or frying pan. Fried anchovies until brown and dry. Lift and drain.
- Using the same pan, add a little more oil if needed. Saute garlic until fragrant.
- Add the beaten eggs to the skillet and stir well until the eggs are set and grainy.
- Put cold white rice into the pan, stir well with eggs and garlic. Make sure all the ingredients are well mixed.
- Add sweet soy sauce and chili sauce (if using), stir well.
- Enter the rice anchovies that have been fried before, stir again until all the ingredients are evenly mixed.
- Add salt to taste according to taste and mix well.
- Lastly, add sliced green onions and red chilies. Stir briefly so that the leeks and chilies are evenly distributed in the fried rice.
- If you like, add a little sesame oil before removing the fried rice from the pan, stir well.
- Remove and serve anchovy fried rice in a serving plate. You can add cucumber slices, crackers, or pickles as a complement. Enjoy anchovy fried rice while it’s warm!
