Soto Kudus is a traditional soup dish originating from Kudus, Central Java. The original Soto Kudus usually does not use beef because of the respect of the Kudus Muslims for the Hindu religion, in which cows are animals that they consider sacred.

1. Recipe for Soto Kudus Chicken

Ingredients:

– 1 whole native chicken, cut into 8 parts
– 2 cm galangal, bruised
– 2 bay leaves
– 2 sticks of lemongrass, bruised
– 1 tbsp salt
– 4 tablespoons of sweet soy sauce
– 1 liter of water
– 200 g bean sprouts, boiled
– 2 tablespoons of fried shallots
– 2 tablespoons of chopped celery leaves
– 2 tablespoons chopped chives
– 2 limes, cut into pieces
– Sambal (optional)

How to Make Soto Kudus Kampung Chicken:

1. In a saucepan, bring water to a boil. Add the chicken, galangal, bay leaf, lemon grass, salt and soy sauce. Boil until the chicken is cooked.
2. Remove the chicken from the pot and chop the meat. Set aside.
3. Strain the broth and return it to the pot. Bring to a boil.
4. To serve, put the shredded chicken and bean sprouts in a bowl. Pour hot broth over it. Garnish with fried shallots, celery leaves, chives, and lime wedges. Serve with chili sauce on the side.

2. Recipe for Soto Kudus Chicken with clear broth

Ingredients:

– 1 free-range chicken, cut into 8 parts
– 2 liters of water
– 2 sticks of lemongrass, bruised
– 3 kaffir lime leaves
– 2 bay leaves
– 2 cm galangal, bruised
– 1 tsp salt
– 1 tsp sugar
– 1 tsp white pepper powder
– 200 g bean sprouts, boiled
– 2 tablespoons of fried shallots
– 2 tablespoons of chopped celery leaves
– 2 tablespoons chopped chives
– 2 limes, cut into pieces
– Sambal (optional)

How to make Soto Kudus Chicken with clear broth:

1. In a saucepan, bring water to a boil. Add the chicken, lemon grass, kaffir lime leaves, bay leaves and galangal. Boil until the chicken is cooked.
2. Remove the chicken from the pot and chop the meat. Set aside.
3. Strain the broth and return it to the pot. Bring to a boil.
4. Add salt, sugar and white pepper powder. Simmer for 5 minutes.
5. To serve, put the shredded chicken and bean sprouts in a bowl. Pour hot broth over it. Garnish with fried shallots, celery leaves, chives, and lime wedges. Serve with chili sauce on the side.
